The research centre stimulates the development, transfer and exchange of knowledge by publications and projects. We perform socially relevant applied research and contribute to the educational programme and advise companies and institutions.

Projects

Machine Learning in a student restaurant

Martijn Zoet, Armand Odekerken, Luc Houben and Leo Fransen will provide a snapshot of their current project Machine Learning in a student restaurant.

At the Hotel Management School Maastricht, first-year students operate the student restaurant REFRESH.

As part of their curriculum, they are challenged to create their own menu offering, based on food-cost calculations and process management.

The ‘Data Driven Hospitality’ research center is developing an additional tool for the students to streamline their restaurant operations. Whilst using machine learning techniques, students will be able to forecast the popularity of their chosen recipes, and adapt if necessary before the menu execution will take place.

The next step is to train the students in these machine learning techniques themselves.

Inspirational Hospitality Stories

Martijn Zoet, Armand Odekerken, Luc Houben and Leo Fransen will provide a snapshot of their current project Inspirational Hospitality Stories.


In the first year of the Data-driven Hospitality research centre, the research group members and two student project groups worked, as part of their graduation, together to develop a program that automatically collects data in the field of trends and developments in the restaurant and hotel industry.

This will be visualized as a dashboard with inspirational hospitality stories.

The next step is to send this stories as a newsletter to the industry on a weekly base.

Minor Data-driven Decision Making

In the minor Data-driven Decision Making, students learn how to use data to make management decisions regarding a specific management challenge.

To do this, students must be able to understand a management challenge from the perspectives of three different domains: financial, human resources, and commercial. Based on data from these three domains, students build a dashboard that supports the relevant manager in making policy or making decisions.

To be able to build the dashboard, classes, workshops and company visits are organized, with which students gain insight into:

  • assessing and optimizing the quality of available data;
  • combining databases so that information from different sources can be linked;
  • ask relevant management and research questions to identify and obtain relevant information for the management dilemma concerned;
  • interpreting and visualizing management information in an accessible, user-friendly way;
  • dealing with data acquisition and processing in a legally responsible and ethical manner.
